Aqueça a margarina e doure o frango; salpique com farinha, verta o conhaque e lance fogo. Passe os cogumelos em água fria e corte-os em tiras. Coloque os cogumelos e o tomate junto aos pedaços do frango e deixe-os cozer um pouco. Acrescente o champanhe deixando ferver em lume brando cerca de 20 minutos. Retirar os pedaços de frango, conservando-os no calor. Ligue o molho com as natas, deixando ferver lentamente. Faça o puré e no fim junte-lhe 1 ovo para ficar mais gostoso. Numa travessa de barro coloca-se as batatas com um pouco de água e o refugado por cima. Corta-se o frango de modo a este assar depressa. Depois do frango cozinhado retire-o do tacho e junte ao molho a água suficiente para cozer o arroz (2 vezes o volume do arroz). Regue com 1/2 copo de água e cubra com papel-alumínio. Leve ao forno até o frango ficar macio (aproximadamente 20 minutos). Retire do forno e despeje sobre o frango as colheradas de requeijão. Espalhe a cenoura e o milho verde e volte ao forno por mais 5 a 10 minutos sem cobrir.
